Tarragon has a mild bitter taste with slight notes of a tea flavor. Tarragon leaves are a medium to olive green with a minty, earthy flavor.
Make a tea with tarragon and mint by adding the herbs to a brewing basket or tea ball and placing in hot water. Tarragon goes well with chicken (especially roast chicken), eggs, and fish.
The Monkey recommends adding tarragon near the end of cooking. This will give the flavors time to develop, while still retaining the brightness of the herb.
